Garden Time from Jo's Country Junction

You might remember me saying that we had some weird weather in April.  It was cold and rainy.  We made it into May with lots of rain and some decent temperatures.

Gardening?…NO. from Jo's Country Junction

The weather here in Iowa has not been conducive to farmers or gardeners or anyone who wants to be outside.  Typically by now I have some things planted.  Typically I’m chomping at the bit to want to buy plants, pots, potting soil and all things garden…but the weather has not been favorable at all.  It’s been cold…and now rainy.  Look at that forecast on my computer.  Although some of those chances are only 30 or 40% chances of rain, it looks down right depressing.

Starting Elderberries from Jo's Country Junction

My son Buck can not only cook and care for the kiddos…but he is also a gardener.  Of all of the kids, he’s my best gardener.  Kayla loves to plant but doesn’t love the tending.  Karl aspires to be a gardener and just might this year.  Kelli and Kalissa have no interest.

Buck was so sweet and chronicled this elderberry planting experience with the kiddos.

My Gardens from Jo's Country Junction

I’d love to show you some amazing garden pictures.  I have a few…many of my flowers are looking pretty good…

But if you look closer, they don’t look as good as they could.  See that space there?


I had what I now believe were deer in my garden.  See the divots?  I think they might be deer prints.  UGH!


I try not to focus on that and instead see the beauty that’s left.


My hummingbird feeder has been a popular place for the birds and for the kids.  They love watching them out the window.

Yard Sauce and Salsa from Jo's Country Junction

I told you on Tuesday that the garden has been taking up lots of my time.  My tomatoes are coming in heavy.  I am not complaining.  I love it…but it is taking up lots of my time.

Instant Pot: Greens from the Garden from Jo's Country Junction

One of my all-time favorite things is greens from the garden.  This year I planted spinach and swiss chard.  Both work great for this recipe.  I’ve made this with canned greens and it’s good that way too but the game is completely upped with fresh greens.

Kramer’s mom made something like this and I loved it.  I went on to make it and introduce it to our kids.  As per usual, I don’t have a “real” recipe but this is what it looks like…and trust me, it’s GREAT!!

My Raspberries from Jo's Country Junction

Time in the Garden from Jo's Country Junction

I told you that I had a couple of days off last week.  I didn’t want a big vacation or even time away.  All I wanted was to finish up some projects at home…mainly the garden and landscaping.

For a long time, I had a flower garden in front of my regular vegetable garden.  The garden always looked unkept.  I was just never happy with it.  I’d weed the veggies and then get pooped out and not weed the flowers.

I plan on having a garden this year. Karl said that he’d be interested in helping.  I’ve had a garden here ever since we moved here and I had a garden for several years when we lived on the farm.
